Let me paint you a picture. I was scrolling through my Instagram feed and I see picture after picture of gorgeously captured food items. Inspired by these beautifully crafted images, I decided to stage my own photoshoot. I had just gotten a delicious green juice, the sun was shining, and the flowers in the backyard were perfectly in bloom. Glass in hand, I began to stage my scene when I heard from the kitchen “mommy, I poopin’!” I ran inside to find Rocco taking a dump in the middle of our kitchen floor. As I grabbed the paper towels, I saw one of our dogs trying to beat me to the cleanup. So, I threw my left leg out to prevent the pug from becoming even grosser than she already is, scooped Rocco up with one hand, wiped the floor with another and then threw him in the shower. Phew. When I went back outside, however, I found Louis, our dog, devouring what was left of my green juice. Unfortunately, any hope of a beautiful Instagram picture by me is going to be put on hold until Rocco potty trains, or Louis passes, or maybe I’ll just stick to admiring everyone else’s feed.
This recipe is my take on a green juice that I get at this cute little organic store down the street. Sometimes I find green juices to be bitter, but this one has the right amount of tang and sweetness to make for a refreshing snack.
SERVING SIZE
- Makes 1 Green Juice
INGREDIENTS
- 1 bunch kale (roughly chopped)
- 1 large lemon (peeled and quartered)
- 1-inch ginger (peeled)
- 1 large cucumber (cut into long strips)
- 2 large granny smith apples (cored and sliced)
- 4 whole celery stalks
DIRECTIONS
- Wash and prep veggies
- Juice in order listed
- Optional: strain through sieve if you don’t like pulp
- Serve immediately and enjoy!
