Quick & Easy Beef Stir Fry

Let me paint you a picture from my night. My husband was working, so I picked up the kids at afterschool and we were home at 5:30pm. “I’m hunnnnnnnngry,” cried the middle one. Usually on the nights he is gone, (he’s a firefighter so is gone for 24 hours at a time) I try and do a good amount of meal prep beforehand, so that we can eat right away. Tonight was not one of those nights. Tonight was the type of night where you get home and go “oh s@&*! I forgot to think about dinner.” Oh and did I mention that bedtime for everyone is 7pm? Looking in the fridge, I knew I had to make something that was fast or else my lion of a three year old would eat us all, and not something that would tie me to the stove, unless I wanted to risk my one year old going to play with toilet water, dog food, or everything else.   By some grace of whomever, I pieced something together and it was good, quick, easy, and only one kid proclaimed they didn’t like it (at first). Enjoy!

 

BEEF STIR FRY—40 minutes from prep to sit down

(Feeds four kids, one adult and yields lots of leftovers)

 

2 lbs sirloin tips (preferably grass-fed), cut into 1 inch pieces

1 red pepper, sliced

2 carrots, chopped

2 big handfuls snow peas

1 bunch baby boy choy

(these are the veggies I had on hand but you can use any)

1 cup dry rice

soy sauce or teriyaki sauce

ghee

 

  1. Cook 1 cup dry rice according to directions
  2. Put ghee in pan, and add carrots, peppers
  3. Heat ghee in separate pan and cook sirloin tips
  4. Just before you take pepper and carrots off the stove, add snow peas and cook for two minutes.
  5. Put beef and veggies in bowl and sprinkle with soy sauce (or whatever sauce you like).
  6. Serve over rice
  7. Enjoy!
