Raspberry Energy Smoothie

I often think of only making smoothies for the morning but forget that they are also a fantastic snack option, especially during the second part of the day, when my eyelids tend to get a little heavy and I start craving something sweet or salty, or both.

I also love making smoothies with my kids as it’s a great way to let them feel like they are really involved in the kitchen. The frozen cauliflower is also a great way to give them a hefty dose of nutrients that they may not have otherwise during the day. At first the older ones were a little wary of putting a “dinner food” in a smoothie, but I found if I print out the recipe and tell them to read the instructions and make it themselves, then they don’t mind because they get to cook.

And if I’m not able to prepare a smoothie and drink it right away, I take it with me in a mason jar and cooler and just shake it up before I have it.

SERVING SIZE
  • Makes 1 Smoothie
INGREDIENTS
  • 1 cup frozen cauliflower
  • 1 cup frozen raspberries
  • 1 lemon (juiced)
  • 2 scoops protein powder (I like the unflavored Vital Proteins organic grass-fed whey protein)
  • ½ tsp vanilla extract
  • 1 tsp maple syrup
  • Frozen blueberries to garnish (optional)
DIRECTIONS
  • Add all ingredients together and blend until smooth.
