I am going to start out by saying, please trust me. I know this combination of foods looks strange and as though they don’t belong together. But they do. They really really do. I love it, my husband loves it and it’s passed the stamp of approval from all four kids. The best part? It’s filling. And for those of you omitting certain food groups, it’s gluten and dairy-free as well. Enjoy!
Ingredients:
2 eggs
1 ripe banana
1 teaspoon vanilla
1 teaspoon pumpkin pie spice
2 tablespoons dried coconut
1/2 apple (diced)
2 tablespoons almond butter
2 teaspoons flax seed meal
coconut oil or ghee
Directions:
- Mash bananas and add in two eggs and the vanilla–whisk until combined
- Add spoonful of coconut oil or ghee to frying pan and cook eggs like you normally would scrambled eggs
- Once done, put in bowl drizzle with almond butter (note: the almond butter “drizzles” better if kept at room temp), then add diced apples, coconut, and flaxseeds
